Baby spinach leaves blanched
3 egg yolks
Pecorino/Romano cheese
Ricotta
salt and pepper
flour for your hands

Directions:
Directions:
In a bowl, combine all ingredients. Flour your hands to make dumpling balls (bite sized). Boil in water 3 minutes after they rise to the surface. Serve with melted butter and cheese.
