8 oz. low mein noodles 1 tsp. peanut oil 2 cloves minced garlic 1 med. onion thinly sliced 1/4 c. vegetable broth 1/3 c. peanut butter 1 1/2 c. sprouts 1/4 c. light coconut milk 8 c. mixed greens 1/4 c. cilantro 2 limes juiced 2 T. chopped peanuts
Cook noodles and set aside. Heat peanut oil in skillet and saute garlic and onions, when soft add broth. Add to noodles and toss in sprouts, peanut butter, coconut milk and coat well. Serve topped with cilantro, lime juice and peanuts.
