3 cups of mixed greens
1/2 (5 oz) of gorgonolza cheese
1/2 pound - thick sliced - pnacetta cut into strips 1 inch long and 1/4 wide
Extra virgin olive oil
3 hard boiled eggs
1/2 cups craisin (plumped with boiling water - about 3 minutes)
2 green pears (peeled and chopped)
1 T garlic
2 tsp fresh thyme leaves
1/4 cups sherry vinegar
fresh ground pepper

Directions:
Directions:
Place greens into bowl.

Add pears, cheese, Crasins and eggs.

Cook pancetta over medium heat until crispy. Drain pancetta. Add 1/4 olive oil, add garlic and thyme. Add vinegar and season with salt and pepper. Toss with salad and serve immediately.
