3 T. butter
2 1/4 c. crushed cornbread stuffing mix
1 large egg
1 large onion, chopped
2 cloves of garlic, crushed
1 green pepper, chopped
1 lb. ground beef
1 T. brown sugar
1/2 tsp. ground cinnamon
1/2 tsp. ground cumin
1 1/2 c. chunky salsa
1 can (10 ozs.) kidney beans, drained
1/2 c. raisins
1 c. (4 ozs.) shredded cheddar cheese

In a bowl, heat butter in 1/4 c. water on HIGH for 1 minute. Stir in stuffing mix and egg. Press into a 9-inch pie plate. In a microwave-safe 3 quart casserole, mix onion, garlic, green pepper and one tablespoon of salad oil. Cover but let vent and cook on HIGH for 3 minutes, stirring once. Add beef and cook on HIGH for 6 minutes, stirring once. Discard fat and stir in sugar, spices, and salsa. Cook on HIGH for 3 minutes. Stir in beans and raisins. Spoon into crust; cook uncovered on HIGH for 6 minutes, rotating dish every 3 minutes. Sprinkle with cheese and let stand for 5 minutes before serving.
