2 c. flour
1/2 tsp. salt
2/3 c. cold butter
1/4 c. cold water
Filling:
5 eggs
2 1/2 c. milk (can use part half and half)
salt and pepper to taste
Use one or a combination of:
cooked shrimp, crab, ham, sausage, asparagus, zucchini, green chiles, spinach, or onion
8-12 ozs. grated cheese, any kind you like (traditionally gruyere or swiss cheese is used)

Crust:
In a food processor, combine flour and salt. Add butter in chunks and process until mixture resembles coarse meal. Add up to 1/4 c. of cold water until dough forms a ball. Roll out between two sheets of wax paper. Fit into a 9-inch pie dish or quiche pan, set aside or chill until ready to use.
Filling:
Slightly beat the eggs and combine with the milk, salt, and pepper. Layer your fillings into the bottom of the dish. On top of that, spread your cheese evenly. Slowly pour liquid into shell. Bake for 10 minutes at 450 and then lower heat to 300 and bake for 40 minutes more. Cool before slicing.
