1 roll of Ritz crackers, crushed fine
1/2 c. margarine, melted
2 T. sugar
8 ozs. cream cheese
1 c. powdered sugar
8 ozs. Cool Whip
2 pkgs. peach jell-o or apricot jell-o
2 c. hot water
1-20 oz. can of drained peaches, reserve juice

Combine cracker crumbs, melted margarine, and sugar. Press into a 9 X 13-inch baking dish and bake at 350 for 10 minutes, let cool. In a medium mixing bowl, combine cream cheese, powdered sugar, and Cool Whip. Spread evenly over cooled crust. In another mixing bowl, combine jell-o with boiling water until dissolved. Add the reserved peach juice and chill until thickening begins. Add peaches and pour over cheese mixture. Refrigerate until firm.
