1 lb raw spinach
2 hard boiled eggs (sliced)
1/2 med onion thinly sliced
1/2 C crumbled feta chese

Directions:
Directions:
Wash spinach well. Pick over and discard brown or damaged leaves. Remove stems; break into pieces in large salad bowl. Add eggs, tomato, onion and cheese

Combine dressing ingre.
6T olive oil
2T wine vinegar
1/2 t oregano, 1/2 t salt
1/4 t pepper
SHAKE WELL. Pour over salad. Toss well; Serve

We got this recipe from Grandma Brown. I make it frequently for holiday meals, but we also enjoy it just with dinner. It looks pretty and healthy and is a nice variation to regular salad.
