Eggplant olive oil pepper garlic salt dried basil fresh basil
Peel and slice eggplant 1/2 to 3/4" thick. Place on cookie sheet. Spray with olive oil Pam or brush with olive oil. Sprinkle with pepper, garlic salt and a little dried basil. Broil or grill 5 min. Turn, repeat seasonings, broil or grill til light brown. Top with FRESH basil bits or strips.
