2 jars (6 oz. each) marinated artichoke hearts
1 medium onion, chopped
1 clove garlic, minced or pressed
1 c. chicken broth
1 c. quick-cooking rice
1/4 c. chopped fresh parsley
salt and pepper

Directions:
Directions:
Drain artichokes, reserving 3 T. of the marinade. Set artichokes aside. In baking dish, place reserved marinade. Add onion & garlic and cook uncovered, in microwave for 2 1/2 minutes. Stir
in broth, rice, parsley, artichokes and salt & pepper to taste.

Cover and cook 3 minutes, stirring once.

Uncover and cook 1 minute more. Let stand, uncovered 3-5 minutes
