1 (8 oz.) Pkg Corn Muffin Mix
1/3 # Shredded Cheese (Jack or Pepper Jack)
1 can Chopped Green Chilis
1 Cup Corn
Additional Cheese for top of cornbread
1 tbsp. Bacon Grease (or more)

Directions:
Directions:
Pre-heat skillet with bacon grease while preparing mix. Prepare cornbread according to package directions. Stir in green chilis, cheese & corn. Pour into skillet and bake at 400 degress for 15-20 minutes. Right before taking out of oven, sprinkle top with additonal cheese and let melt.
