5 c. chicken stock
1 lrg. green pepper, diced
2 c. uncooked rice
3 celery stalks, diced
4 c. diced cooked chicken
1/4 c. fresh parsley, chopped
5 green onions, chopped
4 oz. green olives, chopped
2 c. mayo
salt & pepper
3 6 oz. jars marinated artichokes & reserved artichoke marinade

Directions:
Directions:
Cook rice in chicken stock and cool. Drain and chop artichokes, reserving marinade. Combine mayo and artichoke marinade; mix into rice. Add rest of ingredients. Chill several hrs. or overnight.
