7 BONE PRIME RIB
2-3 TBSP. PEPPERCORN
1 TBSP. COARSE SALT
3-4 TBSP. FRESH MINCED GARLIC
1 TSP. ROSEMARRY
1 TSP. DRIED BASIL

Directions:
PLACE ROAST FAT SIDE UP, BONE SIDE DOWN IN A SHALLOW BAKING PAN. INSERT MEAT THERMOMETER IN CENTER OF ROAST. (POINTED END OF THERMOMETER MAY NOT TOUCH THE BONE). WHEN MEAT COMES TO ROOM TEMPERATURE RUB WITH PEPPERCORN MIXTURE. COOK 25-30 MINUTES TO SEAR AT 450, THEN REDUCE HEAT TO 325, 15 MINUTES PER POUND. AFTER IT COMES OUT OF THE OVEN, LET IT REST FOR 15 MINUTES.
