1 1/3 c. (3 1/2 oz) flaked coconut
1/3 c. sugar
3 Tbs flour
1/8 tsp salt
2 egg whites
1/2 tsp almond extract
1/3 c. chopped pecans or almonds (opt)
About 18 jelly beans, to fill cookies

Directions:
Directions:
Mix coconut, sugar, flour and salt. Stir in egg whites, almond extract and chopped nuts, if desired. Mix well. Drop by teaspoons onto lightly greased cookie sheets. Bake at 325 degrees F for 15-20 minutes, until edges of cookies are golden brown. Immediately remove from cookie sheets to cool on a wire rack and quickly make small indentation with thumb or the back of a spoon. Fill each indentation with a jelly bean. Makes about 18 cookies.
