3 Lbs sweet potatoes
1/2 c. finely diced onion
1 c. chopped green pepper
1 1/2 tsp salt (opt)
1/4 tsp pepper
1 1/2 c. mayonnaise
Dash of hot pepper sauce (opt)

Directions:
Directions:
Cook, peel and cube sweet potatoes. Combine sweet potatoes, onion, green pepper, salt and pepper in a large bowl. Stir in mayonnaise and hot pepper sauce; mix well. Cover and refrigerate at least 1 hour before serving. Makes about 10 servings.
