1 egg
1 Tbsp. seasoned bread crumbs
1 broiler/fryer chicken cut up
2 Tbsp. veggie oil
1 can tomato soup
1/4 cup chopped sweet onion
1/2 tsp. garlic powder
1/2 tsp. dried basil
1/2 tsp. oregano
1 cup shredded mozzarella cheese
1 T. plus 1/4 cup water

Directions:
Directions:
In shallow bowl, beat egg & 1 T. water. Place bread crumbs in a plate. Dip chicken in egg mixture then coat with crumbs. In lg skillet, cook chicken in oil, medium heat for 4-5 minutes or until browned. Remove, drain on paper towels & keep warm. In same skillet, combine soup, onion, garlic, basil, oregano & remaining water. Return chicken to skillet, cover and simmer for 40/45 minutes. Sprinkle with mozzarella cheese. Cover and cook until cheese melts. Remove from heat. Sprinkle with parmesan cheese and serve.
