3 cups peeled and chopped potatoes
cup chopped celery
cup finely chopped carrots
cup chopped onion
tsp salt
1 tsp parsley
1 tsp pepper
2 cans chicken broth
2 cans water

Directions:
Directions:
Put ingredients into a large pot. Cook until tender. Mash lightly.

Add:
1 cup milk
lb. Velveeta cheese (or shredded cheddar)
