3 cups peeled and chopped potatoes
½ cup chopped celery
½ cup finely chopped carrots
¼ cup chopped onion
½ tsp salt
1 tsp parsley
1 tsp pepper
2 cans chicken broth
2 cans water

Directions:

Put ingredients into a large pot. Cook until tender. Mash lightly.

Add:
1 ½ cup milk
½ lb. Velveeta cheese (or shredded cheddar)
