1 lb hard red cabbage, cored and shredded
1 lb apples, quartered, peeled and sliced
lb onions, finely chopped
3 T wine vinegar
3 T light brown sugar
tsp ground cinnamon
1 large garlic clove, crushed
Salt and pepper

Directions:
Directions:
Preheat oven to 300. Combine all ingredients together in a large ovenproof pan and bring to a boil, stirring well. Cover and transfer to the oven. Cook for 2 2 hours, or until the cabbage is very tender, stirring once or twice. Once the cabbage is cooked, serve it immediately. Or turn the oven off and leave the pan inside the cabbage will retain its heat for up to 20 minutes.

Cooked this way, red cabbage will lose its bright color and become a more mellow reddish brown. It reheats very successfully and can be made up to 2 days ahead
