2 lbs. zucchini, diced small 1 can cream of chicken soup 1 cup sour cream 2 carrots, grated 1/4 - 1/2 chopped onion 2 sticks oleo, melted 2 cups grated cheddar cheese 1 pkg. regular Stuffing mix
Combine stuffing mix, cheese and melted oleo and set aside. Combine all other ingredients and 2/3's of the stuffing mixture. Put into casserole; top with remaining stuffing mixture. Bake @ 350º for 40 minutes.
You can use 9 x 13 pan or 2 smaller ones and then freeze one for later.
