8 to 10 potatoes peeled
8 oz. cream cheese, softened
1 cup sour cream
2 tbsp. chopped chives
salt and pepper
4 tbsp. butter

Directions:
Directions:
Quarter the potatoes and put in large pot with salted water to cover, boil until soft, drain potatoes well.
Whip the hot potatoes, adding cream cheese and sour cream, beat until fluffy and smooth, add chives, salt and pepper. Place in buttered 9 x 13 baking dish, dot with butter, cover with foil and refrigerate.
Preheat oven to 325, bake covered with foil for 15 minutes. Continue baking uncovered 20 minutes until crusty on top.
