Pretzel crust:
1 cup pretzel crumbs (5 oz. pretzels)
3 T sugar
½ cup sugar
1 envelope unflavored gelatin
¾ cup lemon juice
4 egg yolks, beaten
1 cup sugar
¼ tsp salt
1 T grated lemon peel
¼ cup tequila
1 ½ T orange flavored liqueur
5 egg whites

Pretzel Crust:
Combine crumbs and sugar. Add melted butter gradually until well mixed. Reserve ¼ of the mixture, for topping.
Press remaining crumbs against bottom and sides of a well buttered 9 inch pie plate. Chill while preparing filling.
Filling:
Soften gelatin in lemon juice about 5 minutes. Beat egg yolks in top of double boiler. Blend in ½ cup sugar, salt and lemon peel. Add gelatin mixture and continue to cook and stir until slightly thickened and gelatin is thoroughly dissolved. About 7 minutes. Immediately transfer to a bowl to cool. Blend liquors into slightly cooled mixture. Chill in refrigerator, stirring often until cold to the touch. Beat egg whites until soft peaks form. Add remaining sugar, minus 1 tablespoon and continue beating until firm and glossy. Fold yolk mixture into whites. Spoon into chilled pretzel crust and sprinkle with reserved crumbs and sugar. Garnish with lemon slices. Chill until firm.

My next door neighbor in Cypress gave me this recipe about 25 years ago. I don’t even remember her name. She made this pie one evening when we were having dinner at their house. It was “to die for”!
