4 eggs
1 qt. whole milk
4 lemons
1 1/4 c. sugar
2 heaping T. corn starch (large kitchen serving spoon!)
Pinch salt

Meringue:
4 egg whites
4 T. sugar
Pinch salt

Directions:
Directions:
Wash lemons and grate zest from the rind. Cut lemons in half & squeeze juice into heavy pan, remove any seeds. Mix 4 egg yolks, grated lemon rind (zest), lemon juice, milk, sugar, cornstarch & salt.

Cook over medium heat stirring constantly until slow bubbles start to form & mixture is thickening. Cover & let cool. (takes a long time)

Bake large pie crust & cool. Fill with lemon filling & top with meringue. Bake 4 1/2 min @ 425 until browned.
