6 cups zucchini
1 cup carrots, grated
1 can cream of chicken soup
1 box Stove Top stuffing
1/2 onion, chopped
1/2 cup celery, chopped
1 carton sour cream

Directions:
Directions:
Cook vegetables until tender, but crisp. Drain and save liquid. Mix soup, sour cream and vegetable liquid. In casserole dish, layer vegetables, stuffing and soup mixture. May sprinkle grated cheese on the top. Cook 20-30 minutes at 350.
