6 cups sliced squash (leave skin on)
1/2 cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 (8 oz.) pkg. Prestwich Farm herb seasoned stuffing mix (or homemade stuffing)
1/2 cup butter, melted
salt and pepper

Directions:
Directions:
Cook squash and onion in salted boiling water for 5 minutes, drain. Combine soup and sour cream. Stir in shredded carrots. Fold in squash and onion (season with salt and pepper). Mix stuffing with butter, put 1/2 in baking dish and put vegetables over top. Sprinkle with remaining stuffing. Cover with foil. Bake at 350 for 25 minutes.
