3 Tbs. vegetable oil
1/2 cup onion, chopped
2 eggs, beaten
1 cup chopped ham, shrimp, chicken or beef
1 cup frozen peas
1 tsp. garlic powder
4 cups cold cooked rice
3 Tbs. soy sauce
1 green onion and top, sliced

Directions:

Heat oil in hot wok or large skillet over medium-high heat. Add onion, stir-fry 1 minute. Add eggs and scramble. Stir in choice of meat, peas, garlic, rice and soy sauce; cook until heated through, gently separating rice grains. Turn out onto serving platter and sprinkle with green onion.
