1 medium onion, chopped
2 Tbs. olive oil
1 lb. chicken, chopped and cooked until done (or use precooked chicken)
1 pkg. flour tortillas, cut into bite-sized pieces
shredded cheese
2 cans cream of chicken soup
1 cup sour cream

Directions:
Directions:
Put the olive oil in a frying pan and fry the chopped onion. In a bowl, add the cream of chicken soup and sour cream to the chicken. In a 10x13 pan, arrange one layer of tortilla pieces, 1/2 chicken mixture, 1 layer shredded cheese, another layer of tortilla pieces, rest of chicken mixture and shredded cheese on top. Cook at 375 for 1/2 hour.
