2 eggs, beaten
1 (20 oz.) can crushed pineapple (juice, too)
2 tsp. vanilla
1 cup sugar
2 tsp. baking soda
2 cups flour
1 cup coconut
1/2 cup softened butter
1 (8 oz.) pkg. cream cheese, softened
2 tsp. vanilla
1 (16 oz.) box powdered sugar
2 Tbs. milk for spreading consistency

Directions:

Mix eggs, pineapple, 2 tsp. vanilla, sugar, soda and flour. Mix well and then add coconut. Pour into a lightly greased cookie sheet (with sides). Bake at 325 for 25-30 minutes until golden brown. When cooled, frost with cream cheese frosting.

To make cream cheese frosting combine butter, cream cheese, 2 tsp. vanilla, and powdered sugar.

Refrigerate (also freezes well).
