graham cracker crumbs
1 Lb small curd cream style cottage cheese
2 (8oz) pkgs cream cheese
1 pint sour cream
1 1/2 cup sugar
4 eggs slightly beaten
2 Tbs lemon juice
1 tsp vanilla
1/2 cup melted margarine
1/3 cup cornstarch

Directions:

Grease and dust a 9" spring form pan with graham cracker crumbs. Preheat the oven to 325F.
Beat at high speed, cottage cheese and cream cheese. When creamy, blend in sugar, then eggs. Reduce to low speed and add cornstarch, lemon juice and vanilla. Add melted margarine and sour cream. Blend until very creamy at low speed. Pour into prepared spring form pan. Bake at 325F for 1 hour and 10 minutes. VERY IMPORTANT!! Turn off the oven and let cake stand in the oven for 2 hours. Remove and cool completely. Remove the ring portion of the spring pan, leaving the cake on the bottom of the pan. Chill. Serve plain or with your favorite topping.
