12 eggs (save 10)
1 1/2 c. milk (save 1 cup)
1 1/2 c. crushed crackers (Toll House)
1 c. chopped, peeled apples
1/4 c. chopped onion
1/4 tsp pepper
2 Lb bulk pork sausage
3 Tbs butter or margarine
3 Tbs flour
1 c. cream style cottage cheese
1/2 tsp salt
dash of pepper

Directions:
Directions:
Beat together 2 eggs and 1/2 cup milk. Stir in the crackers, apples, onion and 1/4 tsp pepper. Add sausage and mix well. Pat the meat into a 6 1/2 cup ring mold. Bake at 350F for 50 minutes. Keep warm.
Melt the butter and blend in the flour. Add the remaining cup of milk all at once. Cook and stir over medium heat until bubbly. Cook 2 minutes more. Beat the remaining 10 eggs and cottage cheese. Add 1/2 tsp salt and a dash of pepper. Stir into the sauce. Cook til done. Serve with sausage ring.
