2- 21/2 Lb sweet potatoes
2 lg or 3 med apples
1/2 c. brown sugar
1/2 tsp grated orange peel
1 Tbs cornstarch
1 tsp salt
1 cup apple juice
2 Tbs butter

Directions:
Directions:
Boil and peel the sweet potatoes. (Medium sized potatoes should take about 20 minutes.) Slice potatoes in half horizontally and arrange cut side up in a 13" X 9" baking pan. Pare, core and slice apples. Layer over the sweet potatoes.
In a saucepan stir together sugar, cornstarch, salt and orange peel. Slowly stir in the apple juice. Cook the mixture stirring constantly, until it boils and thickens. Remove from heat and stir in butter. Pour over sweet potatoes and apples. Bake in a 350 F oven for about 30 minutes. To brown top turn oven to broil for about 5 minutes.
