1 Lb chicken
1 Tbs vegetable oil
1 med. onion - chunk-ed
1 clove garlic pressed
2 carrots sliced
1 med. pepper - chunk-ed
1/4 c. white vinegar
3 Tbs brown sugar
3 Tbs catsup
3 Tbs soy sauce
1 Tbs cornstarch
1 tsp ground ginger

Directions:
Directions:
Cut the chicken into bite size pieces and brown in oil. Reduce heat to low. Add onion and garlic. Cover and cook for 10 minutes. Add carrots and green pepper. Combine remaining ingredients and stir into skillet. Cover and simmer for 10 minutes longer. Serve over rice.
