1 lbs ground beef
1 med onion
1 green pepper
1 cup frozen corn
1 packet taco seasoning
1 packet small tortillas
1 can chopped green chilis
1 med jalepeno pepper
1-1/2 cup of chedder cheese
4 tbsp sour cream
1 can enchilada sauce

Directions:
Directions:
Preheat oven to 350. Sautee onion, green pepper and jalepeno in oil, until onion is translucent. Add ground beef (or ground turkey), until meat is no longer pink. Drain meat. Add taco seasoning. Add frozen corn. Add chilis. Remove from heat. Add sour cream and mix well.

Spoon mixture into tortillas. Place in a large casserole dish.

Top with enchilada sauce, chedder cheese. Spray aluminim foil with Pam. Cover.

Bake in the oven at 350 for 40. Uncover for 10 minutes.

Let cool.
