1 Tbs chopped onion
6 Tbs butter
1/4 c. finely chopped walnuts
1 1/4 c. crushed whole wheat crackers
2 large tart apples
3 eggs
1 c. creamed cottage cheese
1 c. shredded cheddar cheese
1/4 c. milk
1/2 tsp salt
dash of pepper
ground nutmeg

Directions:
Directions:
Peel, core and slice the apples. Cook the onion in butter until tender. Stir in crushed crackers and nuts. Press into a 9" pie plate and bake at 350F for 8 - 10 minutes.
Simmer apples in a small amount of water until tender. Drain and arrange in baked crust. In a blender, blend eggs, cheeses, milk, 1/2 tsp salt and dash of pepper until smooth. Pour into crust. Sprinkle nutmeg on top. Bake at 325F for about 45 minutes or until knife comes out clean. Let stand for 10 minutes before serving.
