3 small or one large goose breast
garlic clove
1 lb pork sausage
1/4 tsp allspice
1/4 tsp thyme
2 T white wine
1/2 tsp salt
1/4 tsp cayenne
2 cans pinto beans
1 crushed garlic clove
1/4 cup tomato paste
1/2 tsp thyme
1/4 tsp allspice
1/4 c white wine
1/2 c chicken or game bird stock
1 tsp salt
1/4 tsp cayenne
Bay leaf
Bread crumbs
1/4 c chopped parsley
Butter

Directions:
Directions:
Preheat oven to 325-degrees. Rub clove of garlic over breast(s). To one pound pork sausage, add 1/4 tsp all spice, 1/4 tsp thyme, 2 T white wine, 1/2 tsp salt and 1/4 tsp cayenne. Mix and form into patties (about 8). Brown in skillet and drain on toweling.
Cut goose meat into bite size pieces and brown in fat left from sausage. Set aside sausage and born one small onion in remaining fat. Add this to the goose meat.
In a mixing bowl, combine two cans pinto beans, one crushed garlic clove, 1/4 c tomato paste, 1/2 tsp thyme, 1/4 tsp allspice, 1/4 c white wine, 1/2 c game bird stock (or chicken broth), 1 tsp salt and 1/4 tsp cayenne.
Pour half of the bean mixture on the bottom of a casserole dish. Then add meat and onion mixture. Pour other half of bean mixture on the top. Add a bayleaf on a toothpick. Place sauage patties on top
Sprinkle the top with mixture of bread crumbs and 1/4 c chopped parsley. Add several dots of butter so bread crumbs will brown. Bake, uncovered, for one hour.
