4 Eggs
¾ c. Milk
¾ c. Flour
1 T. Sugar
¼ t. Salt
4 T. melted butter

2/3 c. Sugar
¼ t. Cinnamon
1/8 t. Nutmeg
1/3 c. Butter
1 T. Lemon Juice
1 t. grated lemon rind
5 Large Cooking Apples, Pared, Cored & Sliced

Mix eggs, milk, flour 1T. sugar and salt in bowl. Batter will be thin and slightly lumpy. Spray two three-quart deep dish casserole dishes (I use oval) with cooking spray. Pour 2 T. Melted butter into each dish. Pour half the batter into each dish. Bake in preheated 425 degree oven for 20 minutes or until set and crust is browned. DO NOT OPEN OVEN DOOR DURING BAKING.

Melt 1/3 cup of butter, add lemon juice and rind. Mix in 2/3 cup sugar, cinnamon and nutmeg. Heat while paring the apples; add apples as each one is pared. Sauté apples until tender, 3-5 minutes. Spoon apple mixture into pancakes. Cut into wedges to serve.
