1 pkg. Stouffer's Harvest Apples, defrosted
1 can (22 oz.) sweet potatoes or yams, drained
2 eggs
2 Tbs. butter
1 Tbs. sugar
1/2 tsp. vanilla extract
1/4 tsp. ground nutmeg

Directions:
Directions:
Defrost Harvest Apples in microwave on Medium (50%) power for 6 to 7 minutes. Preheat oven to 400. Lightly grease a baking sheet.

Whip sweet potatoes until smooth in a large mixing bowl. Add eggs, butter, sugar, vanilla extract and nutmeg; beat until well combined. Season to taste with salt. Spoon mixture onto prepared baking sheet, forming 6 mounds, 2 inches apart. Make a depression in each mound using back of a spoon to form a shell. Fill centers of shells with apples.

Bake for 30 minutes.
