4 (2 1/2 lb.) chicken, quartered (I use chicken breasts)
1 head of garlic, peeled and pureed
1/4 cup dried oregano
coarse salt and pepper
1/2 cup red wine vinegar
1/2 cup olive oil
1 cup pitted prunes
1 1/2 cups Spanish green olives
1/2 cup or one can capers with a bit of juice
6 bay leaves
1 cup brown sugar
1 cup white wine
1/2 cup Italian parsley or fresh cilantro, finely chopped

Directions:
Directions:
In a large bowl, combine chicken, garlic, oregano, salt and pepper, vinegar, olive oil, olives, capers and bay leaves. Cover and refrigerate overnight.

Place chicken in a shallow pan, cover with marinade. Sprinkle brown sugar and pour wine over. Bake at 350 for 50 minutes to 1 hour, baste frequently if necessary. Serve on a platter with some juice and sprinkle with parsley/cilantro. Pour remaining juice in a sauceboat.

To serve cold: cool to room temperature in juices before placing on a serving platter. If it has been refrigerated, return to room temperature before serving. Spoon some of remaining juices over chicken.
