cup mayonnaise
cup sugar (or 2 packets Splenda)
1 tbsp. soy sauce
4 Tbsp. Red wine vinegar
2 (12 oz.) bags broccoli florets
1 cup golden raisins or Craisins
1 (11 oz) can Mandarin oranges, drained
cup coarsely chopped pecans, toasted
cup sliced green onion
12 pieces bacon, cooked crisp and diced

In a small mixing bowl whisk together the mayonnaise, sugar, soy sauce and vinegar (chill)
(note: I was iffy on the dressing, so taste and alter to taste before adding.
I would leave out the soy and add a few tablespoons of the orange juice from the can.
Another twist might be to use Olive Oil instead of mayo.)


Bring 4 cups water to a rolling boil. Put the broccoli florets in a colander and pour the water slowly over them to blanch. When cool, break apart larger florets so they are all a similar size.

Combine florets with Craisins and oranges and enough dressing to lightly coat. Cover and refrigerate until ready to serve.

Just before serving, fold in pecans, green onion, and bacon.
