2 lbs. boneless pork butt or loin
2 cups celery
1 cup onion - chopped
1 handful flour (thickener)
1 large bottle V-8 (plain or tangy)
1 jar salsa

Directions:
Directions:
Chop celery, including leaves. Then combine all ingredients in slow cooker and cook on low for 6-8 hours. Remove roast and using a fork, pull or tear meat into strands. Return to pot with juices to keep warm and moist.

Serve on sandwich rolls, with coleslaw and pickles.

Great recipe for guests arriving for a meal when the "arrival time" can vary! Mina McComb was my maternal grandmother, who had lived in Ohio.
