3 medium Zucchini unpeeled
2 T. butter
1/4 lb. chopped mushrooms
2 T. flour
1/2 t. salt
1/4 t. oregano
1 cup shredded Monterey Jack Cheese
2 T. sour cream
1/4 cup parmesan cheese

Directions:
Directions:
Cook zucchini in boiling water covered for 10-12 min. Drain and cut in half lengthwise. Scoop out centers, leaving a 1/4 inch shell. Chop centers. In a skillet, melt butter, saute mushrooms for 2 minutes. Add flour, salt, and oregano. Remove from heat. Stir in Monterey Jack Cheese, sour cream and chopped zucchini centers. Fill shells, using about 1/4 cup filling for each. Top with parmesan cheese. Broil until hot and bubbly-3-5 minutes.
