3 Eggs, beaten
1 cup Oil
2 Cups Sugar
2 cups Zucchini, shredded
2 tsp Vanilla Extract
3 cups Flour
1 tsp Baking Soda
tsp Baking Powder
1 tsp Salt
1 tsp Cinnamon
cup Chopped Nuts, optional

Combine eggs, oil, and sugar in a large bowl and mix well.Mix in vanilla and zucchini.Sift together dry ingredients and add gradually until well mixed. Stir in nuts.Grease and flour 2 loaf pans and divide batter between them.Bake for 1 hour or until tests done at 350.
