6 large russet potatoes
1 head of garlic
1 T. olive oil
1 stick butter
1 1/2 c. heavy cream
salt and pepper to taste

Directions:
Directions:
Cut the top off the garlic clove, exposing the cloves and place in a shallow roasting pan. Fill pan with enough water to cover about 1/2 the head of garlic. Drizzle olive oil on top of garlic. Bake in a 425 oven until garlic is soft. Remove from oven, let cool, then squeeze the garlic out of the skins and set aside.
In a large stock pot, boil potatoes, with skins, until a fork can easily be inserted into potatoes. Remove potatoes from water, let cool slightly, and remove skins.
In sauce pan, combine butter, cream, and salt and pepper. Bring to a boil and let simmer 2 minutes.
Combine potatoes, garlic and cream mixture and mash to desired texture. Add more salt or pepper as needed.
