3 cups whole wheat flour
1 tsp. baking soda
1 tsp. salt
3 tsp. baking powder
2 tsp. cinnamon or pumpkin pie spice
1/2 cup chopped nuts
3 eggs
1 cup brown sugar
1/2 cup granulated sugar
3/4 cup vegetable oil
3 tsp. vanilla
2 cups grated zucchini or carrot
3/4 cup raisins (optional)

Directions:

Preheat oven to 350. Grease and flour two, 8x4x2 inch, loaf pans. Combine dry ingredients with nuts and set aside. In a large mixing bowl, beat eggs, sugars, and oil on high speed for 3 minutes or until light and frothy. Stir in vanilla, zucchini or carrot (and raisins, if desired). Gradually blend in dry ingredients, mixing well after each addition. Divide batter evenly between the prepared loaf pans. Bake for 45-55 minutes, or until wooden toothpick inserted in the center comes out clean.
