1 egg 1/2 c. milk 1/4 c. vegetable oil 1 1/2 c. flour 1/2 c. sugar 2 t. baking powder 1/2 t. salt 1 c. blueberries - fresh or frozen
Heat oven to 400º. Beat egg with a fork. Stir in milk and oil. Blend dry ingredients together. Gradually add to egg mixture. Stir until flour is moist. Batter should be lumpy. Add blueberries. Fill muffin tins or paper liners 2/3 full. Bake 20-25 minutes until golden brown.
