2 c. grated carrots
2 c. raisins
3 c. sugar
3 1/2 c. water
2 cubes of margarine
4 c. flour (sift and measure)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. ginger
2 tsp. cinnamon
1 tbsp. vanilla

Directions:
Directions:
Mix carrots, raisins, sugar, and water. Boil for 20 minutes. (mix ingredients well)
Add cubes of margarine. Remove from heat and cool approximately 30 minutes.
Next add the rest of your ingredients, and 1 cup of chopped walnuts.
Place in well greased bundt pan and bake at 325 for 1hour.
