1 lb.chicken breast (boneless, skinless)
2 Tbs. butter or margarine
1 cup milk
3/4 cup water
1 pkg. asparagus cuts or broccoli spears, thawed (10 oz.)
1 red pepper
1 chicken bouillon cube
1 1/2 cups minute rice
1/2 cup mayonnaise
1/4 cup swiss cheese, grated

Directions:
Directions:
Cut chicken into 1-inch pieces and saute in large skillet with butter for about 5 minutes. Cut red pepper into thin strips and add to skillet along with the milk, water, asparagus and bouillon cube. Bring to a full boil. Stir in rice. Cover; remove from heat and let stand 5 minutes. Stir in mayonnaise and cheese.
