Large Butternut Squash ~ 3 lb. peeled & cubed
1/3 c. olive oil
2 cloves garlic
some parsley flakes
1 tsp. salt
1/2 tsp. pepper
1/3 c. grated Parmesan

Directions:
Directions:
Place cubed squash in a 9 x 13 (sprayed) pan.

Mix remaining ingredients EXCEPT the Parmesan and put on the squash.

Bake at 400 until tender-approximately 40 minutes. Sprinkle with Parmesan.
