2 lb potatoes
4 large eggs
1 med. onion, chopped
1 rib celery, chopped

Sauce:
1 c. mayonnaise or Miracle Whip
2 1/2 t. yellow mustard
2 t. sugar
2 T. sweet pickle relish
1 t. salt
1/2 t. pepper

Directions:
Directions:
Peel and chop potatoes to desired size. Place in saucepan and cover with water. Generously salt the water and boil potatoes until tender. Boil eggs until hard. Peel eggs, and chop.

Put cooked potatoes, eggs, onion and celery in large bowl.

Mix sauce in separate bowl until sugar is dissolved. Pour over potato mixture and gently combine.

I learned this recipe from Mom and Grandma. I seemed to develop a touch for it and was always requested to make it at family gatherings. It was never written down until a couple years ago when my brother, Jeff, wanted to make 10 lbs of it for a birthday party. Needless to say, I had never made that big a batch or measured anything. So I set my mind to the task and measured everything using 2 lbs of potatoes so Jeff could easily multiply. I think it turned out pretty good.
