3 large leeks
2 T. butter
salt & pepper
1/4 c. whipping cream or half & half
2 - 6oz. pieces of salmon
1 T. each: zest of orange and lemon
juice of 1 lemon
2 T. chopped fresh tarragon
3 .T honey

Directions:
Directions:
Rinse leeks, cut into 1" sections. Melt butter & add leeks. Cook over med heat 5 min. Add cream and salt & pepper to taste. Cook 5 min. longer until tender. Place leeks in center of 2 oven-warmed plates and set aside.

Blend honey, zests of orange & lemon, lemon juice and tarragon in blender until smooth. Brush salmon with this glaze. Grill over coals or broil 2-1/2 min. each side. Place salmon on leeks and serve.
