2 lb. wheel brie, cut crosswise
8 oz. dried apricots, chopped & soaked in Amaretto
Slivered almonds, toasted or sauteed.

Directions:
Directions:
Mix apricots and almonds. Spread 1/2 mixture in middle and 1/2 on top. Bake 250 until warm and soft, not runny. Serve w/crackers and sliced red and green apples.

To make in puff pastry:
Freeze brie in 2 slabs. When frozen spread almond/apricot mixture on each half, reassembling brie. Wrap in 2 sheets of puff pastry, using egg wash to seal. Freeze entire thing. Bake 400 for 30 mins.
