4 chicken breasts cooked, diced, and chilled
1 c chopped celery
2 c grated apple
1 c halved grapes green or red
1 c roasted cashews
1 tsp tarragon
Salt and pepper to taste
1 c mayonaise
2 tsp lemon juice
1 tsp sugar
Lettuce

Directions:
Directions:
Mix mayo, lemon juice, tarragon, and sugar. Salt and pepper to taste. Add to the chicken, celery, cashews that have been roasted, and apple. Serve over shredded lettuce or on a lettuce leaf. This is good in a croissant also. Red and green grapes give it good color. The other option is to dice the apple for color instead of grating it. It makes the texture of the salad a little different.
